A hearty and flavorful Cajun potato soup with sausage, perfect for a comforting meal.
Ingredients
- 4 cups diced potatoes
- 1 lb smoked sausage, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1/2 cup shredded cheddar cheese
- 2 green onions, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sausage and cook until browned. Remove and set aside.
- Add onion and garlic to the pot. Cook until softened.
- Stir in potatoes, Cajun seasoning, salt, and pepper.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes or until potatoes are tender.
- Return sausage to the pot. Stir in heavy cream and simmer for 5 more minutes.
- Garnish with cheddar cheese and green onions before serving.
Notes
- Adjust Cajun seasoning to taste.
- Substitute heavy cream with milk for a lighter version.
- Store leftovers in the fridge for up to 3 days.
