Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 cup hot sauce
- 2 tbsp butter, melted
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 2 cups cooked rice or quinoa
- 1 cup shredded lettuce
- 1/2 cup diced celery
- 1/2 cup shredded carrots
- 1/4 cup crumbled blue cheese
- 1/4 cup ranch or blue cheese dressing
Instructions
- Preheat oven to 375°F (190°C).
- Mix hot sauce, melted butter, garlic powder, onion powder, paprika, and salt in a bowl.
- Coat chicken breasts with the sauce mixture and bake for 25 minutes or until fully cooked.
- Shred the chicken and toss with remaining sauce.
- Divide rice or quinoa between two bowls.
- Top with shredded chicken, lettuce, celery, carrots, and blue cheese.
- Drizzle with ranch or blue cheese dressing.
