Description

Delicious muffins combining the flavors of apple and pumpkin with a crunchy streusel topping.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 cup grated apple
  • 1/4 cup chopped walnuts (optional)
  • For streusel topping: 1/4 cup flour, 2 tbsp brown sugar, 1/2 tsp cinnamon, 2 tbsp cold butter


Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a bowl, mix flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk pumpkin puree, milk, egg, and melted butter.
  4. Combine wet and dry ingredients. Fold in grated apple and walnuts.
  5. For streusel, mix flour, brown sugar, and cinnamon. Cut in cold butter until crumbly.
  6. Spoon batter into muffin cups. Sprinkle streusel on top.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool before serving.
