Description
Delicious apple cider whoopie pie cookies with a rich caramel filling. Perfect for fall treats.
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1 large egg
- 1/2 cup apple cider
- 1 tsp vanilla extract
- For the filling: 1/2 cup unsalted butter, 1 cup powdered sugar, 1/4 cup caramel sauce, 1/4 tsp salt
Instructions
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- Whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
- Cream butter and sugar until fluffy. Beat in egg, apple cider, and vanilla.
- Gradually mix dry ingredients into wet ingredients.
- Drop dough by tablespoons onto baking sheets. Bake for 10-12 minutes. Cool completely.
- For filling, beat butter until smooth. Add powdered sugar, caramel, and salt. Mix until creamy.
- Spread filling on flat side of half the cookies. Top with remaining cookies.
Notes
- Store in an airtight container for up to 3 days.
- Use fresh apple cider for best flavor.
- Chill dough for 30 minutes if too sticky.
