Crispy air fryer chicken taquitos packed with hidden veggies for a healthier twist.
Ingredients
- 2 cups cooked shredded chicken
- 1/2 cup finely chopped spinach
- 1/2 cup grated zucchini
- 1/4 cup diced red bell pepper
- 1/2 cup shredded cheese
- 1 tsp taco seasoning
- 12 corn tortillas
- 1 tbsp olive oil
Instructions
- Mix chicken, spinach, zucchini, bell pepper, cheese, and taco seasoning in a bowl.
- Warm tortillas briefly to make them pliable.
- Place 2 tbsp of filling on each tortilla and roll tightly.
- Brush taquitos lightly with olive oil.
- Air fry at 375°F for 8-10 minutes until crispy.
- Serve with salsa or sour cream.
Notes
- Use damp paper towels to keep tortillas from cracking
- Can substitute with flour tortillas if preferred
- Freeze uncooked taquitos for later use
