Description

Crispy air fryer chicken taquitos packed with hidden veggies for a healthier twist.


Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup finely chopped spinach
  • 1/2 cup grated zucchini
  • 1/4 cup diced red bell pepper
  • 1/2 cup shredded cheese
  • 1 tsp taco seasoning
  • 12 corn tortillas
  • 1 tbsp olive oil


Instructions

  1. Mix chicken, spinach, zucchini, bell pepper, cheese, and taco seasoning in a bowl.
  2. Warm tortillas briefly to make them pliable.
  3. Place 2 tbsp of filling on each tortilla and roll tightly.
  4. Brush taquitos lightly with olive oil.
  5. Air fry at 375°F for 8-10 minutes until crispy.
  6. Serve with salsa or sour cream.

Notes

  • Use damp paper towels to keep tortillas from cracking
  • Can substitute with flour tortillas if preferred
