Description
A creamy and flavorful soup made with sweet potatoes, spices, and coconut milk.
Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 can (400ml) coconut milk
- 2 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp chili powder
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and ginger. Sauté until softened.
- Add sweet potatoes, cumin, coriander, and chili powder. Stir well.
- Pour in vegetable broth and coconut milk. Bring to a boil.
- Reduce heat and simmer for 20 minutes or until sweet potatoes are tender.
- Blend the soup until smooth using an immersion blender or regular blender.
- Season with salt and pepper. Serve hot.
Notes
- For extra spice, add a pinch of cayenne pepper.
- Garnish with fresh cilantro or roasted peanuts.
- Store leftovers in the fridge for up to 3 days.
